Ensaymada is a Filipino style brioche bun and traditionally, it’s topped with cheese. This is the only way I’ve ever had ensaymada growing up but Ensaymada Project in Newhall, CA is taking this humble bun to the next level with amazing flavors!

For years, Chari, the founder was just giving these as gifts before she started selling them out of her garage. It’s no surprise that she’s since outgrown her garage and now has a separate home for her goodies and has even started shipping them nationwide. Leading the operation today is Chef Joey who brings pastry experience from Michelin star restaurants and his time in France. Watching him in the kitchen made me love this bakery even more as you can tell how much care, love, and attention is put into every bun. No bun goes to waste as any ensaymada that doesn’t pass the visual test gets turned into an ensaymada bread pudding – I love that!
